  • 1/2 cup fruit puree
  • 1/2 cup buttermilk or milk + 1 tablespoon lemon juice (let sit for 5 minutes to make “buttermilk”)
  • 1 egg
  • 1 teaspoon vanilla
  • A cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

The frosting only requires a cup of organic cream and a tablespoon of pure maple syrup mixed together. The fruit puree needs half a cup of peeled and sliced peaches and one whole banana.

Form the batter by mixing the fruit puree, milk, egg, and vanilla together in one bowl. In another bowl, mix the whole wheat flour, the baking powder, baking soda, and salt. Slowly pour the liquid ingredients into the bowl of dry ingredients. Mix them well together until everything is wet and there aren’t a lot of clumps.

Prepare your baking pan by greasing it. It should be round and about six inches. You can simply double the pan and the ingredients if you want to add more layers to the cake.

Bake the pan at three hundred and fifty degrees for about twenty to thirty minutes. You can check if it is already cooked by sticking a knife or a toothpick into the cake.
